Preserves and Their Uses

Maggie Black continues her cultural history of food with a look at preserves.

Food preserving goes back to very ancient times for physical survival has been the overriding motive; most directly, storage of food against a 'rainy' day in the widest sense – drought, a harvest lost through pestilence or war, or just the rigour of winter – has been man's conventional reaction to fear of starvation for at least as long as he has recognised the existence of property and rights.

However, there have been other, more subtle forms of insurance which are worth analysis for the light they throw on modern eating patterns.
